Easy and Delicious Blueberry muffins!

Ingredients

  • 3 cups all-purpose flour
  • 1-1/2 cups white sugar
  • 1 teaspoon salt
  • 1 tablespoon and 1 teaspoon baking powder
  • 2/3 cup vegetable oil
  • 2 egg
  • 2/3 cup milk
  • 2 cups fresh blueberries

Topping:
  • 1 cup white sugar ( I used brown sugar)
  • 2/3 cup all-purpose flour
  • 1/2 cup butter, cubed
  • 1 tablespoon ground cinnamon

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
  2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
  3. To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
  4. Bake for 20 to 25 minutes in the preheated oven, or until done.



Ok, so ... I work with some wonderful women at the little resale shop and one was going to the blueberry fest.  She asked me if I would like her to bring home some blueberries!  Little did I know they would arrive in a bushell sized box.  Now to find the illusive blueberry muffin recipe!  Weeks back, while traveling with Aubrey, we happened upon a little church having a bake sale... a woman there was baking the most delicious muffins... these are close!  I remember my grandmother, hearing impaired, humming to herself in the tiny kitchen of her Hurlock Maryland home.  Handmade curtain pulled to keep the heat out of the rest of the house,   Bright yellow cabinets, just enough space for her to create her wonderful recipes.  
   My sister and I would wake, hearing her humming off tune to some music playing in her head.  She would be creating the most yummy blueberry muffins from scratch.  I wish I could find her recipe, but i bet it was rattling around in her head... like the music she hummed to!
